CHOCOLATE CUPCAKES

I love celebrating my friend's birthdays!  And what says celebration better than cupcakes?
Before cupcakes were the "cool thing" -- think Sprinkles, DC Cupcakes, I loved to bake them.

This past week was my dear friend Lila's birthday!  She is one of my classmates in dental school and a friend who I count as a huge blessing to have in my life. Lila is real, down-to-earth, funny and caring -- we have shared tears together before with frustrations in dealing with school (think tests, patients, desperately trying to meet requirements) and been able to celebrate exciting moments in each others lives as well!

I did a little investigative research and according to her hubby, chocolate cake is her favorite.  Enter chocolate cupcakes.

Chocolate Cupcakes
Ingredients

1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
3/4 teaspoon vanilla extract
1 cup milk
Directions
Preheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper or foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Frost with your favorite frosting when cool.
**I added some Hershey's Special Dark powder for good measure (pun intended)


Because I love my food processor, I topped the cupcakes with vanilla frosting and semi-sweet chocolate chips that were processed.

  1. Happy birthday to Lila!! I bet she is super excited you are her friend, I mean just look at those cupcakes! Delicious!! Love the pic of her attacking the CPR dummy...I remember getting certified. My partner and I couldn't stop laughing when we were practicing all the stuff!
