WHITE BEAN ENCHILADAS

In honor of my sister cooking dinner tonight, she is guest blogging for me!


Hello hello!!!  I am doing a guest post tonight because I cooked me and Kall a great dinner tonight--white bean enchiladas!!!  I got the recipe from myrecipes.com.  It's from a Cooking Light magazine!  I followed it to a T except I used plain, non-fat yogurt instead of sour cream and  added mushrooms to the "batter" because mushrooms just make everything better.  Here is the link:  http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=224927.


The verdict?  Delicious and very filling.  I would totally make them again.  Here is them straight out of the oven. 


 I topped them with a bit more plain yogurt as sour cream.  We served them with spinach leaf salad.  This dinner was fabulous because it had two of my favorite things---Mexican food and mushrooms!!!  

I have a fun casserole planned for us in two weeks.  Until then.  xoxo
